Paolo D’Agostin
Paolo D'Agostin was born in the province of Treviso, a region in northeastern Italy with a strong dedication to wine production. Growing up in a winemaking family, Paolo developed a passion for agriculture and the world of wine during his childhood.
His education and knowledge expanded after obtaining a degree in oenology from the Cerletti Technical Agrarian Institute of Conegliano Veneto. Paolo then graduated from the University of Udine with concentration in Food Science and Technology. During this time, he worked in the Department of Food Science and Technology where he analyzed and worked with food and wine.
Paolo was able to combine his passion for his region and wine when he took a position with the Cantina dei Produttori di Valdobbiadene. Throughout his experience there he continued to learn about production management and quality control.
Since 2002 Paolo has been working as an oenologist and is responsible for Cantina di Soave production. He actively engages in research on new vinification technologies and refining, while applying his knowledge of traditional Veronese winemaking.
As a result, Cantina di Soave wines have received important recognition at the international level, attaining medals at Vinitaly and gaining exposure in Decanter and at the International Wine Challenge. One of the most prestigious moments for the Soave Classico Castelcerino, was winning the Gran Medaglia d'Oro at Vinitaly, a first for the wine.
Paolo's passion for winemaking and the experience he acquired through his wine studies have made him fascinated about the world of wine tasting. He enjoys fresh and fragrant wines such as Soaves as well as wines with more body and roundness like Valpolicella, Ripasso and Amarone.
Filippo Pedron
Filippo Pedron was born and raised in Trentino, an area in northern Italy famous for wine and viticulture. Born into a wine-making family, Filippo was exposed to the industry and immediately became fascinated. He studied at the Technical Agrarian Institute of San Michele all'Adige in Trentino, one of the most respected oenological schools in Italy.
Filippo began his wine career working in Tuscany, a world-renowned region for producing quality wines. From 1981 to 1995 Filippo worked to master the secrets of Tuscany's famous red wines. He worked for Mercatale Val di Pesa (Firenze) where he was responsible for vinification, refining, and bottling. He then took on the role of Technical Director for Castello d'Albola, a winery in the Chianti Classico Zone.
Since 1996 Filippo has worked as the Technical Director for Cantina di Soave. His earlier experience of working with red wines in Tuscany has resulted in his appreciation for the indigenous red varietals of the Veneto: Corvina, Rondinella, and Molinara. Under his direction, Rocca Sveva Amarone has received 3 trophies from the exclusive International Wine Challenge.
